Fabulous eggs and bacon sandwich

Ingredients

6 eggs

4 pieces of cooked bacon

2 tablespoons chives
-
¼ of grated cheddar cheese

4 ounces of cream cheese
-
3 tablespoons mayonnaise
-
½ teaspoon salt
-
¼ teaspoon freshly ground pepper

12 slices of bread
Steps

First the eggs

Boil about one-half to one inch of water, the amount that just comes out of the steamer insert.

Place the eggs from the refrigerator in a steamer insert and place the steam in the boiling water.

Boil for 3 to 5 minutes. I go with the longer time because I don't like soft yolks.

Turn off the burner but let the pan and eggs sit for about 15 minutes.

Soak the eggs in an ice bath.

Crack the eggshells, peel them easily and continue with your recipe.

How to make the perfect egg salad for sandwiches

In a small bowl, combine cream cheese, mayonnaise, chives, salt and pepper.

In a large bowl, use a pastry cutter to mash the eggs. Finely chop the bacon and add it to the eggs.

Add grated cheddar and cream cheese mixture to eggs and bacon. Mix until everything is well combined and the eggs are covered with cream cheese.

Serve on bread with baby spinach.
